  1. In a high-speed blender combine the oats, milk, baking powder, egg, salt, and vanilla. Blend until smooth. If the mixture is too thick/not pourable, add more milk.
  2. Heat a large skillet over medium heat and add just enough coconut oil or butter to coat the pan.
  3. Once hot, pour about ¼ cup of batter into the pan. Sprinkle a few pieces of the chopped chocolate onto the batter.
  4. Once the edges begin to bubble, about 2 minutes, flip the pancake and cook for another minute or until cooked through. Repeat with the remaining batter.
  5. Top with butter and pure maple syrup and enjoy!
